This was one of my favorite treats to pick up at PCC when I lived in Seattle. I missed this treat so much, I had to seek out the recipe. Thank goodness that I found they had it posted on their site. I have made this so many times, and thought I would share with others looking for a simple sweet treat for the holidays!
Vegan Chocolate Mousse
- Silken Tofu 16 oz.
- Chocolate Chips 16 oz.
- Unsweetened Soy Milk 1/2 cup
- Vanilla Extract 2 Teaspoons
I modified this recipe to fit with the tools I have on hand.
In a small saucepan, I combined a little Unsweetened Soy Milk with the chocolate chips on the stove top to melt the chocolate. Use a very low temperature, be patient, and stir.
Then, in a bowl, I combined the Tofu, Soy Milk, Vanilla Extract, and blended until smooth using my immersion blender. Next, I add the melted chocolate and keep mixing until smooth. I make sure it is smooth, or the texture could be a little grainy (still tasty, but a strange texture you really don't want).
Serve right away or store in the fridge for later. The entire family loves this sweet treat, we also like to put chopped pecans on top for a little crunch.
Now that I am back in NC, I will have to find a vegan banana pudding recipe!
Note: You can add honey (I like to add a little when I use dark chocolate 70% or greater, but then it is no longer vegan!) I am not vegan, but we love to mix it up in the kitchen! Original recipe can be found here.
