Cabbage Soup!

It is cold out, and it is the perfect time for soup! This is one of my families favorites this time of the year. I hope you will enjoy this easy recipe and add it to your family favorites!

  • 1 Head of Cabbage
  • 1 lb. Ground Hamburger or Turkey (tofu crumbles work too, but don't overcook)
  • 6–8 cups Water
  • 6 oz. Tomato Paste
  • 2 Vegetable Bouillons
  • 1 teaspoon of a Tumeric
  • 1 single serving size of onion soup mix or dried onions
  • Salt and Pepper
  • Garlic (dry granules work great; otherwise, I would finely mince/smash the garlic)
  • Sriracha
    Note: Ingredients are approximate, adjust to your taste.

Start by browning meat in large pot with salt, pepper, garlic. Meanwhile, chop cabbage into thin, short slivers, but not too small. Once meat is cooked, in the same large pot add water, vegetable bouillon, and tomato paste. Stir until well mixed.

Stir and simmer for around 10 minutes. Add cabbage, stir it in well until thoroughly mixed. Add Sriracha sauce until it has a good kick. Remember the spice will build, so start out with less. Cook for about 10 minutes or desired crispness. The most important thing is not to overcook the cabbage, you lose the texture and end up with mush. Not so good, but still edible. Tip: Cabbage is one food that will cause flatulence (gas). The turmeric that is added to the soup may help with that. Best have fennel or ginger tea on hand after dinner!
